BAKING INSTRUCTIONS
Maine Sub Roll 4oz. Dough
Individual 4oz sub rolls made to thaw and bake in your food service programs. Bahn Mi sandwiches and sausage & peppers never tasted so good with 100% Maine Grains!
PANNING
Place frozen bread on a sheet pan.
Oil parchment paper.
Rolls arranged slightly touching will make pull-apart sub rolls
OR
Rolls arranged 3” apart (as in the photo) will make bulky sub rolls.
COVER WITH PLASTIC TO KEEP HUMID.
THAWING
Thaw 12-18 hours overnight in cooler (35°-38F°F) OR 90-120 minutes at room temperature (72°-75°)
PROOFING
In a proofing oven or near warm ovens with a plastic cover over dough, proof at 95°-100°F at 85% humidity for 45-60 minutes.
BAKE
Bake at 325°- 350° for 18-20 minutes
Use rack/convection/deck oven.
Bake until crust is golden brown and middle rolls have an internal temperature of 190°-200°F.
TOPPING
If desired, brush with butter, garlic, herbs, everything seasoning or parmesan cheese/nutritional yeast.
