What Is Fougasse?

In French cooking, fougasse is a type of bread typically associated with Provence but baked throughout the country. Traditionally, bakers will “slash” a pattern into the dough in order to resemble a head of wheat.

  • Your favorite size dough ball from The Good Crust (e.g. 12oz., 16oz.)

  • 1-2 tbsp Extra-virgin olive oil (for brushing onto the surface of your fougasse)

  • Salt and herbs (about 1 tsp each, or to taste, for sprinkling atop your fougasse)

  • Semolina flour (if you're building your fougasse on a peel, enough to lightly coat)

Whole Wheat Fougasse Baking Instructions

If you’re baking your fougasse on a baking sheet:

  1. Lightly oil your baking sheet and pre-heat your oven to 500°

  2. Shape your dough ball into a long, oval shape

    (Tip: Let the dough rest for 10-15 minutes if it's too elastic to shape)

  3. Use a sharp knife to cut slits into the inside and/or the outside of the oval to your desired pattern

  4. Brush your fougasse with oil and top with salt (and your favorite herbs if you’d like)

  5. Bake your fougasse at 500° for 12 minutes (or until golden brown)

If you’re baking your fougasse on a pizza stone:

  1. Pre-heat your oven to 500° (and let your pizza stone preheat for 45 minutes)

  2. Sprinkle your pizza peel with enough semolina to lightly coat the surface

  3. Shape your dough ball into a long, oval shape

    (Tip: Let the dough rest for 10-15 minutes if it's too elastic to shape)

  4. Use a sharp knife to cut slits into the inside and/or the outside of the oval to your desired pattern

  5. Brush your fougasse with oil and top with salt (and your favorite herbs if you’d like)

  6. Slide your fougasse from the pizza peel onto your pizza stone

  7. Bake your fougasse at 500° for 12 minutes (or until golden brown)
